The recipe for this treat used to be found on the box of Rice Krispies; it was called Marshmallow Squares.  I've also seen it called Rice Krispie Treats, Rice Krispie Cake, or some combination of these.  Almost everyone growing up in the 50's, 60's and 70's can remember eating Rice Krispie Squares as a kid.  And its so easy to make, it usually is one of the first things that kids learn to make.  After all, it only has three ingredients; four if you add vanilla.  It seems like everybody has made these at one time or another, but when you get a craving, you need to know where to turn to give you the right measurements.

Ahh, but what are the right measurements anyway?  Of course now we can Google it, and if you do you will find many slightly different versions of the same thing.  In fact, this is the first recipe I ever experimented with to make it the way I wanted it. And I wanted it to be sticky and gooey!  There are the ones you got at church and school gatherings, that were hard as rocks.  And even as a kid, I knew that wasn't the way I liked them.   So I tried various measurements of the ingredients until I got them just the way I wanted them.  And making them is just as easy as I remember it being – even easier now that I can melt the marshmallows and butter in the microwave.

Here's how:

Rice Crispy Squares Rice Crispy Squares-001 Rice Crispy Squares-003 Rice Crispy Squares-004 My first step is to find a big bowl and spray it well with cooking oil spray, so that the gooey marshmallow mixture doesn't stick to your bowl.  While you are at it, spray a 9 x 12 pan too, and set it aside.  Next is to add a package of marshmallows and a stick of butter to the bowl, and put it in the microwave.   Cook it on high for 20 or 30 seconds at a time, and then take it out and stir it after each cooking cycle.  First, the butter will melt.  Then the marshmallows will start to get soft around the edges.  Then finally, you will be able to stir it into a smooth mass like you see in the last picture here to the left.  Add the vanilla and stir well to make sure there are no lumps of marshmallow left before moving to the next step.

While you were cooking the marshmallows in the microwave, you should have been also measuring out your Rice Krispies into another large bowl or measuring cup.  Because as soon as the marshmallow mixture is ready, you add the cereal to the bowl all at once, and stir quickly to distribute the cereal through the marshmallow mixture evenly.  Dump the whole thing into your pre-greased pan, and press down firmly with the back of a large spoon or with your hands.  This stuff is super sticky, and so whatever comes in contact with it must be well-greased or it will stick.  I start by pushing it around with the spoon, but then as more sticks to the spoon than stays in the pan, I grease up my hand and press the mixture evenly into the pan with my hand.  It can still be pretty hot, so be careful!

That's it!  Easy, right?  The two most important things to remember are:

  1. Grease everything really well that comes into contact with your mixture.  A spray oil works really well for this.
  2. Make sure to measure everything out, and prepare your bowl and pan ahead of time, because once the cereal hits the marshmallow, it starts to firm up, so you must work quickly.

After that, the hardest part is waiting for them to cool enough to cut and eat.

Rice Krispie Squares

Everyone's favorite. My version is stickier and gooier than the original. Make it seasonal by using the Holiday coloured cereal. Naturally gluten-free too.

Ingredients

  • 6 Tbsp margarine or butter
  • 8 cups mini marshmallows, (or full bag of large size)
  • 1 1/2 tsp vanilla
  • 8 cups Rice Krispies

Instructions

  1. Spray large glass bowl with cooking spray to grease well. Also grease a 13 x 9 inch pan and set aside.
  2. In large glass bowl, microwave margarine for 30 seconds or so to melt. Stir in marshmallows and microwave another 1 to 1 1/2 minutes, in 30 second bursts, stirring after each burst. Stir till marshmallows are all melted and blended. Stir in vanilla.
  3. While marshmallows are melting, measure out cereal in a separate large bowl or measuring cup. As soon as marshmallow mixture is completely melted and smooth, stir in cereal, working as quickly as you can.
  4. Turn out into greased 13" x 9" pan. Smooth and press down with back of spoon or greased hand. Cool before cutting.

Notes

You can melt the butter on the stove till very hot, then stir the marshmallows into the pot if you don't want to use the microwave.
